Start by selecting ripe bananas, then peel them carefully to remove the skins. Next, place the peeled bananas in a bowl and begin mashing them
Melt butter in a saucepan over medium heat. Stir in brown sugar, cinnamon, and vanilla extract until dissolved. Add dark rum and simmer until slightly thickened.
Whisk together flour, baking powder, baking soda, and salt in a separate bowl until evenly combined and there are no lumps.
Beat eggs and granulated sugar in a large bowl until fluffy. Blend in mashed bananas, sour cream, and cooled bananas foster sauce.
Gradually add dry ingredients to wet ingredients, stirring until just combined.
Preheat oven to 350°F (175°C). Pour batter into a greased pan. Drizzle remaining bananas foster sauce on top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cool cake in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. Slice and serve warm or at room temperature.
